Ingredients:
· 500g mussels (frozen without the shell)
· 4 scallions (chopped)
· 2 tomatoes (diced)
· Handful chopped parsley
· 2 tbsps. Canola oil
· 1tbsp. teriyaki sauce
· 1 tbsp. soy sauce
· ½ a lemon (freshly squeezed)
· Salt and pepper to taste
· A pinch of cayenne pepper
Preparation:
1. Sauté chopped scallions in canola oil for 2 mins
2. Add the diced tomatoes and let sauté 2 more mins
3. Add the soy sauce and teriyaki sauce and let cook for 3 more mins
4. Pour 3 cups of water and let simmer on medium high heat for 5 mins
5. Add the washed clean mussels and let cook for 5 mins further
6. Season with salt, black and cayenne pepper
7. Pour the freshly squeezed lemon juice, and enjoy
8. Sprinkle with chopped fresh flat leaf parsley and serve hot
